This Week in the Bakery

This week was a ton of fun, and I got to make some new and fun recipes. I recently have begun to switch to the anti-inflammatory diet, for health reasons. I’ve been making the joke about the Endo diet that it means En…do everything from scratch. That is to an extent what it feels like in my book. With that being said I baked a little (I’m still baking more…today) and then I cooked…a bit as well. Either way, I’m going to share what I made with the recipe links and I hope you love them :)

First up was these delicious sourdough pumpkin scones. They were absolutely amazing and I would 100% make them again. My only thing I would change as someone who loves spices is I’d probably double the spices like nutmeg and such. It would give it a more pumpkin pie taste. Again, not everyone’s preference that’s just my two cents. It was really good though.

Next up are some juice shots. I love juice shots honestly and its a good way to get a lot of nutrients, my opinion. I like them and I had made these fun labels for them a while ago because I mean how much better is it to drink “extract of llama”. If you do not get the reference please look up the quotation with The Emperor’s New Groove. Anyways…this recipe is delicious and I tweaked it a teeny bit. Firstly I used 2 pineapples, I also used a green tea with coconut instead of coconut water, I used local raw honey, and I also put slightly more turmeric and ginger in. It was really good and I’m definitely making it again.

I also made some chia seed jam. This is filling for another recipe. The chia seed jam is super easy to make and adding some chia seeds also helps add a bunch of fiber as well. Also you literally cut up fruit, throw it in a pot with some water and honey boil and mash it, then have the chia seeds and a bit of lemon juice. Its that simple. Which, I don’t know about you, but I am always ALL FOR a recipe that is simple. I used strawberries for mine.

Okay soooo main reason for the above chia seed jam, Sourdough Breakfast Bars. YAS! They are jam filled in the middle. I mean its sourdough so its delicious. I also made sure to include some walnuts on top. After you bake them you can easily wrap them up individually and keep them in the fridge for an easy on the go breakfast…well…bar. They turned out really tasty and hubs liked them a lot too so I will consider that a win.

Lastly this soup is chef’s kiss. Hubs also is quite obsessed with it, so again winning. I made a double batch so we could eat on it over the week and since its 2 of us at 4 days that is probably 8 servings in most circumstances. I used kale in mine because I like the flavor it adds and again its a favorite of hubs. Instead of regular chicken broth, I used chicken bone broth for a tiny bit more protein. I also used a knob or two of turmeric in the soup as well while it was boiling. Its very light so it doesn’t feel heavy. Its honestly delicious!

And that’s what’s been made this week in my kitchen. More to come next week including some peach focaccia, we shall see how it turns out.
