This Week in the Bakery
This past weekend in the bakery (my kitchen). I didn’t do a ton as I was quite hyper focused on finishing the Diablo sauce bag, coming soon! However, it was the weekend before finals for hubs and that means he gets to pick what is made. Hey if you are having to study your ass off all day long you should get to pick the carbs you refuel your brain with…my opinion.
I’m basically obsessed with sourdough and make everything I can sourdough because…gut healthy<3.
Anywho, so I made a very classic make that is asked for a lot, Cheezits. I make them a lot during the semester, so they can be taken to class. Last year we had the Barrister’s Ball and everyone knew me as the one who sends him with snacks, namely Cheezits.
We bought a big ol’ thing of blueberries as well, so of course we had to have some blueberry baked deliciousness too. I normally make scones at least once a week sometimes more. I’m the friend that comes bearing baked goods any time I visit or go to yoga class, or get my nails done. I gotta feed everybody apparently. But I made these delicious blueberry coffee cake scones. O MY GOD. They are so good and hubs and my yoga instructor were raving about how they were the best scones to date. So, I highly recommend them!
A trick also, I used cane sugar vs. regular granulated sugar.
Lastly, I made some blueberry (because again I had a lot of them) coffee cake muffins. They are really good. I actually tossed in blueberries as the recipe did not call for them but hey it worked! My only qualm with them is they have much more of a cake texture versus a muffin texture. Think super moist and floofy and a bit spongy in a good way. I like cake, don’t get me wrong. It just wasn’t what I was expecting. However, it was really good. I also used only 1 c of sugar and I used again the cane sugar vs. granulated sugar as well.
