Hey all, life has been a bit hectic lately so I haven’t meal prepped much other than English Muffins for breakfast lately. However, this past weekend I was like nope, its time to get back my belly needs it and I need a refresh after going to Universal Studios two out of three weekends. Love me some butterbeer but man all the food and such and soda, I just needed some fiber rich and healthy food.
And without further ado, here’s the list of meal prep things for this week.

Sourdough English not McMuffins.
Okay so these English muffins have become a staple in the house. I keep them on hand because we both absolutely love them. This week however, I wanted to focus on adding more protein as well to my breakfast. That spawned me making scrambled eggs with Fairlife milk and also adding a slice of turkey bacon and some cheese and pre-making some breakfast sammiches. I know it sounds silly but having them already assembled where all I have to do is toss it in the microwave for 30 seconds is a game changer!
Also hello sourdough English muffins are AMAZING. They are easy to make and taste way better than store bought.

Tofu and Green Beans

So, for lunch I wanted to do tofu…because I’ve been on a not a lot of meat kick lately. This recipe is delicious. I paired it with some chili crisps because…why not? And the extra little kick is wonderful. I also added some couscous on the side as well as I wanted a bit more with it and didn’t want rice as the side. However rice would be a great option. I just was going to have rice for dinner meal prep so I wanted a different grain. I used some roasted chicken couscous from a box nothing fancy.
Its delicious and hubs loves it as well and has been eating away at it.

Veggie Curry

So many veggies in here and I love some cooked zucchini. I also paired this with some rice. I tend to get the packets of different flavored rice and half it. That way I can try a variety of flavors and I’m not just stuck with plain rice. I got some turmeric rice and it was a great pairing. I did also use a chicken bone broth for a bit more protein and nutrients for the broth instead of veggie which adding really well to the flavor.
Its also quite delicious.

Basically this week’s meal prep has been amazing and the food great and makes mine and hub’s bellies happy and my nutritionist happy so what more can you ask for.
